Muesli bars are one of those snacks that can easily be made from the contents of your cupboard. They don’t look the prettiest but they taste amazing. Handy to have around and especially handy for camping snacks (pictured below)|
INGREDIENTS
125G Butter
¼ Cup Golden syrup
1 Cup Rolled oats
½ Cup Sultanas
½ Cup Dried cranberries
½ Cup Chopped dried apricots
½ Cup Dried coconut
½ Cup Self raising flower
½ Cup Brown sugar
1teaspoon honey
1 cup chocolate melts
Ingredients wise I’ve been making a concerned effort to buy organic and local produce.
METHOD
Step 1: Preheat oven to 180°C. Place the butter and golden syrup in a small saucepan over low heat and cook, stirring, until the butter is melted.
Step 2: Place the oats, sultanas, cranberries, apricot, flour and sugar in a bowl and mix to combine. Add the butter mixture and mix to combine.
Step 3: Press into the base of a lightly greased 20cm x 30cm tin lined with non-stick baking paper. Bake for 20–25 minutes or until golden. Allow to cool completely in the tin before drizzling melted chocolate on the top and cutting into slices to serve.
Makes 8–10.
Of course the chocolate topping is optional and feel free to substitute any of the mixed fruit. Sometimes I like to add some nuts
